Anti-Inflammatory Chicken Soup

Ingredients

  • 1 pound chicken breast
  • 2 cups chopped carrots
  • 1 cup chopped celery
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 teaspoon turmeric
  • 1 teaspoon black pepper
  • 2 cups chopped kale
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery. Sauté until softened.
  3. Add garlic, turmeric, and black pepper; cook for another minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add chicken breast and reduce to a simmer. Cook until chicken is done.
  6. Remove chicken, shred it, and return it to the pot.
  7. Add kale and cook until wilted.
  8. Adjust seasoning and serve warm.
