Instructions

  1. In a bowl, mix flour and salt.
  2. In another bowl, whisk eggs and milk together.
  3. Combine wet ingredients with the dry mix to form a batter.
  4. Bring a pot of salted water to a boil.
  5. Using a spaetzle maker or colander, drop the batter into boiling water.
  6. Cook until they float to the surface, then remove with a slotted spoon.
  7. In a skillet, melt butter, add mushrooms and garlic, and sauté until golden.
  8. Add vegetable broth and simmer.
  9. Toss spaetzle with mushroom sauce and garnish with parsley.
