Bacon Cheddar Gnocchi Soup – A Rich and Creamy Comfort Meal

Ingredients

  • 4 slices bacon
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 package (16 ounces) gnocchi
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove bacon and set aside.
  2. Add olive oil to the pot and sauté the onion until translucent. Add garlic and cook for another minute.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the gnocchi and cook until they float to the top.
  5. Reduce the heat and stir in the heavy cream and cheese until melted.
  6. Crumble the bacon and add back to the pot. Season with salt and pepper.
  7. Garnish with chopped parsley before serving.

Notes

  • This soup can be made ahead of time and reheated.
  • For a vegetarian version, omit the bacon and use vegetable broth.
