Blackberry Velvet Gothic Cake: A Dark, Lush Dessert Dream

A dark, lush dessert dream that combines the richness of chocolate with the tartness of blackberries.

  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup boiling water
  • 1 cup blackberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt.
  3. In another bowl, combine buttermilk, oil, eggs, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients and mix until combined.
  5. Carefully stir in the boiling water and blackberries.
  6. Pour the batter evenly into the prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  9. Frost with chocolate ganache or your favorite frosting.

Notes

  • For a richer flavor, use dark chocolate cocoa powder.
  • Feel free to add an additional cup of blackberries for decoration before serving.
