  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, chopped
  • 1 cup zucchini, diced
  • 1 cup spinach, chopped
  • 2 cups vegetable broth
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  3. Add bell peppers, zucchini, and spinach; cook for 5 minutes.
  4. Stir in the orzo pasta, vegetable broth, and seasonings; bring to a boil.
  5. Reduce heat, cover, and simmer for 10 minutes until orzo is tender.
  6. Remove from heat and stir in shredded cheese.
  7. Transfer the mixture to a baking dish and sprinkle additional cheese on top.
  8. Bake for 20 minutes or until bubbly and golden.
