Chicken Enchiladas are a must-try for dinner!

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup diced onions
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil and sauté onions until translucent.
  3. Add shredded chicken, cumin, and chili powder; mix well.
  4. Pour a layer of enchilada sauce in a baking dish.
  5. Fill each tortilla with the chicken mixture and roll them up.
  6. Place the rolled tortillas seam-side down in the baking dish.
  7. Top with remaining enchilada sauce and shredded cheese.
  8. Bake for 20-25 minutes until the cheese is bubbly.

Notes

  • Serve with sour cream and fresh cilantro.
  • Feel free to add vegetables to the filling, such as bell peppers.
