Chicken Pozole Verde

  • 2 cups cooked, shredded chicken
  • 6 cups chicken broth
  • 2 tomatillos, husked and quartered
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 can green chiles
  • 1 cup hominy, drained and rinsed
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine chicken broth, tomatillos, onion, garlic, cumin, and oregano. Bring to a boil over medium heat.
  2. Reduce heat and simmer for 15 minutes, until tomatillos are tender.
  3. Stir in cooked chicken, green chiles, and hominy. Cook for an additional 10 minutes.
  4. Season with salt and pepper to taste. Serve hot.
