Chickpea Salad Sandwich

A quick and healthy Chickpea Salad Sandwich that’s perfect for meal prep and packed with flavor.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup celery, diced
  • 1/4 cup red onion, diced
  • 1/4 cup pickles, diced
  • 4 slices whole grain bread
  • 1 cup lettuce leaves

Instructions

  1. In a mixing bowl, mash the chickpeas with a fork until chunky.
  2. Add mayonnaise, Dijon mustard, garlic powder, salt, and black pepper. Mix until well combined.
  3. Fold in the diced celery, red onion, and pickles.
  4. Spread the chickpea mixture onto slices of bread.
  5. Top with lettuce leaves and another slice of bread.
  6. Slice and serve immediately or store for later.

Notes

  • This sandwich can be made vegan by using a plant-based mayonnaise.
