  • 1 pound flank steak
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 bunch cilantro, chopped
  • Juice of 2 limes
  • 4 cups cooked rice
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced

Instructions

  1. In a small bowl, mix olive oil, garlic, cumin, chili powder, lime juice, and chopped cilantro.
  2. Marinate the flank steak in the mixture for at least 30 minutes.
  3. Grill or sear the steak for about 5-7 minutes on each side until cooked to your preference.
  4. Let the steak rest for a few minutes, then slice it thinly.
  5. To assemble, place rice in bowls, top with sliced steak, cherry tomatoes, and avocado.
  6. Garnish with additional cilantro and lime wedges if desired.
