- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon ground cinnamon
- 1/4 cup brown sugar
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted butter.
- Mix in the baking soda and salt.
- Add the sugar, egg, and vanilla extract; mix until well combined.
- Gradually add the flour and mix until just combined.
- In a separate bowl, combine the ground cinnamon and brown sugar to create the swirl mixture.
- Add half of the batter to the prepared loaf pan, sprinkle with half of the cinnamon swirl mixture, then add the remaining batter, topped with the rest of the swirl mixture.
- Bake for 60-65 minutes or until a toothpick comes out clean.
- Let cool before slicing.
