  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter.
  4. Add the baking soda and salt to the banana mixture, then mix in the sugar, egg, and vanilla extract.
  5. Finally, stir in the flour until just incorporated.
  6. In a small bowl, mix cinnamon with a teaspoon of sugar for the swirl.
  7. Pour half of the batter into a greased loaf pan, sprinkle with half of the cinnamon-sugar mixture, then top with the remainder of the batter and the remaining cinnamon-sugar.
  8. Bake for 60-70 minutes or until a toothpick comes out clean.
  9. Let cool before slicing.

Notes

  • For a richer flavor, add nuts or chocolate chips.
  • Use very ripe bananas for the best sweetness.
