- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sweetened shredded coconut
- 1 (8 oz) package cream cheese, softened
- 1 cup powdered sugar
- 1 (8 oz) tub whipped topping
- 1 (3.4 oz) package instant coconut pudding mix
- 1 (2 cups) cold milk
- 1 additional cup whipped topping, for topping
- In a medium bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9×13 inch dish to form the crust.
- In another bowl, beat the cream cheese and powdered sugar until smooth. Fold in 1 cup whipped topping.
- Spread the cream cheese mixture over the crust.
- In a separate bowl, whisk together coconut pudding mix and cold milk until thickened. Spread over the cream cheese layer.
- Top with 1 cup of whipped topping and sprinkle with shredded coconut.
- Chill for at least 2 hours before serving.
Notes
- For extra coconut flavor, use coconut milk instead of regular milk in the pudding.
- This dessert can be made a day in advance for better flavor.
