  • ¼ cup sugar
  • ½ cup melted butter
  • 16 ounces cream cheese
  • 1 cup powdered sugar
  • 1 tablespoon vanilla extract
  • ½ cup brewed coffee, cooled
  • 2 large eggs
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix crushed graham crackers, sugar, and melted butter until combined. Press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese and powdered sugar until smooth. Add vanilla and coffee, mixing well.
  4. Blend in eggs one at a time until just combined.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. Bake for 50-60 minutes or until the center is set.
  7. Let cool, then refrigerate for at least 4 hours.
  8. Before serving, whip heavy cream and spread on top of the cheesecake.

Notes
