Ingredients

  • 4 medium sweet potatoes
  • 1 cup fresh cranberries
  • 1 apple, peeled and diced
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup pecans, chopped
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then bake for about 45 minutes until tender.
  3. Allow the sweet potatoes to cool slightly, then cut them in half and scoop out the flesh into a bowl.
  4. Add cranberries, apple, maple syrup, cinnamon, nutmeg, and mix until combined.
  5. Fill the sweet potato skins with the mixture and sprinkle with pecans and brown sugar.
  6. Bake again for 15-20 minutes until heated through and tops are golden.
