Creamy Tomato White Bean Stew

A delicious and hearty creamy tomato white bean stew that is easy to make and perfect for comfort food lovers.

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Stir in minced garlic and cook for an additional minute.
  4. Pour in diced tomatoes, white beans, vegetable broth, basil, and oregano.
  5. Bring to a simmer and cook for 20 minutes.
  6. Stir in heavy cream and season with salt and pepper.
  7. Simmer for another 5 minutes and serve hot.
