  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)
  • 1 cup chopped strawberries
  • 1/2 cup sliced kiwis
  • 1/2 cup coconut flakes

Instructions

  1. Rinse the sushi rice in cold water until the water runs clear.
  2. Combine the rice and water in a pot, boil, then simmer covered for 18 minutes.
  3. In a bowl, mix sugar, vanilla, and rice vinegar; stir into the cooked rice.
  4. Spread rice on a bamboo mat, and lay down sliced strawberries and kiwis.
  5. Roll the mat tightly to form sushi, then slice into pieces.
  6. Whip the cream with powdered sugar and vanilla until peaks form.
  7. Serve sushi rolls drizzled with whipped cream and coconut flakes.
