Crock Pot Creamy Cajun Chicken Pasta: A Flavorful Slow Cooker Favorite

A delicious and creamy pasta dish made in a slow cooker with a Cajun twist.

  • 1 pound boneless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 8 ounces penne pasta
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Place the chicken breasts in the slow cooker and season with Cajun seasoning.
  2. Add the chopped onion, diced bell pepper, minced garlic, diced tomatoes, chicken broth, and heavy cream.
  3. Cover and cook on low for 4-6 hours, or until the chicken is cooked through.
  4. Once cooked, remove the chicken and shred it using two forks.
  5. Add the cooked penne pasta and shredded chicken back to the slow cooker.
  6. Stir in the grated Parmesan cheese, and season with salt and black pepper to taste.
  7. Mix well and let it heat through for another 10-15 minutes.
  8. Serve warm and enjoy!
