Crockpot Vegetarian Tortilla Soup

A delicious and easy-to-make vegetarian tortilla soup, perfect for cozy nights.

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon lime juice
  • 1/4 cup fresh cilantro, chopped
  • 4 corn tortillas, cut into strips

Instructions

  1. In the crockpot, heat the olive oil and sauté the onion and garlic until translucent.
  2. Add the bell pepper, diced tomatoes, vegetable broth, black beans, corn, chili powder, cumin, salt, and pepper. Stir well.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Before serving, stir in lime juice and cilantro. Add tortilla strips on top for serving.

Notes

  • Adjust the spice level by adding jalapeños for heat.
  • Top with avocado and cheese for extra flavor.
