- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14.5 ounces) diced tomatoes
- 4 cups vegetable broth
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon lime juice
- 1/4 cup fresh cilantro, chopped
- 4 corn tortillas, cut into strips
- In the crockpot, heat the olive oil and sauté the onion and garlic until translucent.
- Add the bell pepper, diced tomatoes, vegetable broth, black beans, corn, chili powder, cumin, salt, and pepper. Stir well.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Before serving, stir in lime juice and cilantro. Add tortilla strips on top for serving.
