Easy Balsamic Chicken & Veggie Orzo

A simple and delicious one-pan recipe for balsamic chicken with orzo and fresh veggies.

Ingredients

  • 2 cups orzo pasta
  • 1 pound boneless chicken breasts
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste

Instructions

  1. Cook the orzo according to package instructions; drain and set aside.
  2. In a large pan, heat olive oil over medium heat.
  3. Season the chicken breasts with garlic powder, onion powder, Italian seasoning, salt, and pepper.
  4. Add chicken to the pan and cook until browned and cooked through, about 6-7 minutes per side.
  5. Remove chicken from pan and let rest for a few minutes before slicing.
  6. In the same pan, add broccoli and cherry tomatoes and sauté for 3-4 minutes.
  7. Stir in the orzo and balsamic vinegar, mixing well.
  8. Slice chicken and serve over the orzo and vegetables.

Notes

  • This dish is great for meal prep. Store in airtight containers for up to 3 days.
  • Feel free to substitute your favorite vegetables.
