Ingredients

  • 2 pounds beef short ribs
  • 4 cups beef broth
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 bay leaf
  • 1 cup red wine
  • 8 slices baguette
  • 2 cups Gruyère cheese, shredded

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and cook until caramelized.
  2. Add garlic, thyme, and bay leaf; sauté for a couple of minutes.
  3. Pour in red wine, scraping up any browned bits from the bottom, then add beef short ribs.
  4. Pour in beef broth and bring to a simmer. Cover and cook for 2-3 hours until meat is tender.
  5. Remove the short ribs, shred the meat, and discard bones. Return meat to the pot.
  6. To serve, ladle soup into bowls, top with baguette slices and sprinkle with cheese.
  7. Under the broiler, toast until cheese is bubbly and golden.

Notes

  • For extra flavor, add a splash of Worcestershire sauce.
  • Serve with a salad for a complete meal.
