- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup pumpkin puree
- 2 large eggs
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/4 cup melted butter
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix the pumpkin puree, eggs, brown sugar, vanilla extract, milk, and melted butter.
- Combine the wet and dry ingredients, mixing until just combined.
- Heat a griddle or skillet over medium heat and grease lightly.
- Pour 1/4 cup of batter for each pancake and cook until bubbles form, then flip and cook until golden brown.
- Serve with indulgent cinnamon butter.
