Glazed Cranberry Orange Loaf

A delicious and moist glazed cranberry orange loaf perfect for breakfast or a snack.

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 1 cup fresh cranberries
  • 1/2 cup powdered sugar
  • 1 tablespoon water

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix sugar, melted butter, and egg until combined.
  4. Add orange juice and zest to the wet ingredients, stirring thoroughly.
  5. Gradually add the dry ingredients to the wet mixture, folding in the cranberries.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Let cool before glazing.
  9. For the glaze, mix powdered sugar and water until smooth and drizzle over the cooled loaf.

Notes

  • For a twist, add chopped nuts or chocolate chips to the batter.
  • Store leftovers tightly wrapped at room temperature for up to 3 days.
