  • 1/2 cup peanut butter
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 2 cups gluten-free oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together pumpkin puree, peanut butter, brown sugar, and maple syrup until well combined.
  3. In another bowl, combine gluten-free oats, cinnamon, baking soda, and salt.
  4. Add the dry ingredients to the wet ingredients, and stir until just combined.
  5. Fold in chocolate chips.
  6. Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are golden brown.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
