  • 2 cups gluten-free flour
  • 1 cup oats
  • 1/2 cup coconut oil
  • 1/4 cup maple syrup
  • 4 ripe peaches, diced
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine gluten-free flour, oats, coconut oil, maple syrup, brown sugar, cinnamon, and salt to form a crumbly mixture.
  3. Press half of the mixture into a greased baking dish to form the base.
  4. In another bowl, mix the diced peaches with a little brown sugar and cinnamon, then layer over the base.
  5. Sprinkle the remaining crumb mixture on top of the peaches.
  6. Bake for 25-30 minutes until the top is golden brown.
  7. Allow to cool before cutting into bars.
