  • 1 cup cooked rice
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1/2 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon dill
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper.
  3. Shape the mixture into meatballs and place them on a baking sheet.
  4. Bake for 20-25 minutes or until cooked through.
  5. In a separate bowl, mix Greek yogurt, lemon juice, dill, and diced cucumber to make the tzatziki.
  6. Serve meatballs over rice, topped with tzatziki and fresh veggies.
