Healthy Cucumber Pasta Salad

A refreshing take on pasta salad, packed with healthy ingredients for a light meal.

Ingredients

  • 8 ounces whole wheat pasta
  • 2 cups diced cucumber
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • salt to taste
  • pepper to taste

Instructions

  1. Cook the whole wheat pasta according to package instructions; drain and cool.
  2. In a large bowl, combine the diced cucumber, cherry tomatoes, red onion, parsley, and feta cheese.
  3. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper.
  4. Combine the pasta with the vegetable mixture, then pour the dressing over and toss well to coat.
  5. Chill in the refrigerator for at least 30 minutes before serving.
