Heart-Healthy Avocado Turkey Chili Stuffed Sweet Potatoes

  • 4 medium sweet potatoes
  • 1 pound ground turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 avocado, diced
  • 1 cup corn kernels
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and prick the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
  3. In a skillet over medium heat, cook the ground turkey until browned.
  4. Add black beans, diced tomatoes, corn, chili powder, cumin, garlic powder, onion powder, and season with salt and pepper. Simmer for 10-15 minutes.
  5. Once sweet potatoes are baked, slice them open and fill with the turkey chili mixture.
  6. Top with diced avocado and serve warm.
