- 1/2 cup protein powder
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup blueberries
- 2 eggs
- 1/4 cup honey or maple syrup
- 1/2 cup milk (dairy or non-dairy)
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, combine oats, protein powder, baking powder, and salt.
- Add the blueberries and mix gently to combine.
- In another bowl, whisk together the eggs, honey, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Scoop the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool for a few minutes before transferring to a wire rack.
Notes
