Homemade Blueberry Protein Muffins

These homemade blueberry protein muffins are not only easy to make but also deliciously nutritious, perfect for a quick snack or breakfast.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup blueberries
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1/2 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, combine oats, protein powder, baking powder, and salt.
  3. Add the blueberries and mix gently to combine.
  4. In another bowl, whisk together the eggs, honey, milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Scoop the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.

Notes

  • For added flavor, consider adding 1/2 teaspoon of cinnamon to the dry ingredients.
  • These muffins can be stored in an airtight container for up to 5 days.
