- 1 cup rolled oats
- 1/2 cup protein powder
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the rolled oats, protein powder, baking powder, and salt.
- In another bowl, combine the honey, applesauce, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries.
- Divide the batter evenly among the prepared muffin cups.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Let cool for a few minutes before removing from the tin.
