Homemade Blueberry Protein Muffins

Delicious and healthy homemade blueberry protein muffins that are perfect for breakfast or a snack.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the rolled oats, protein powder, baking powder, and salt.
  3. In another bowl, combine the honey, applesauce, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries.
  5. Divide the batter evenly among the prepared muffin cups.
  6. Bake for 20-25 minutes, or until a toothpick comes out clean.
  7. Let cool for a few minutes before removing from the tin.

Notes

  • For added flavor, consider mixing in some cinnamon or lemon zest.
