  • 2 cups diced carrots
  • 2 cups diced potatoes
  • 1 cup chopped celery
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup green beans, chopped
  • 1 cup turkey bacon, diced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onions and garlic, and sauté until softened.
  3. Add the carrots, potatoes, and celery, cooking for about 5 minutes.
  4. Add thyme, rosemary, and stir well.
  5. Pour in the vegetable broth and canned tomatoes, bring to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Add the green beans and turkey bacon, cooking for another 10 minutes.
  8. Season with salt and black pepper before serving.
