  • 3 large eggs
  • 3 cups peeled and diced apples
  • 1 teaspoon vanilla extract
  • 1 package cream cheese (8 oz), softened
  • 1/2 cup butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking soda, cinnamon, and salt.
  3. In another bowl, combine the granulated sugar, brown sugar, and oil.
  4. Add eggs and vanilla to the sugar mixture, then mix in the dry ingredients.
  5. Fold in the diced apples.
  6. Pour batter into a greased baking pan.
  7. Bake for 45-50 minutes or until a toothpick comes out clean.
  8. While the cake is baking, prepare the cream cheese frosting by mixing the cream cheese and butter until smooth, then gradually add powdered sugar and vanilla.
  9. Once the cake has cooled, spread the frosting over the top.
