  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 2 cups cherry tomatoes, halved
  • 1 teaspoon red pepper flakes
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon balsamic vinegar
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the rice noodles according to the package instructions until al dente.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the onion and garlic, sauté until translucent.
  4. Stir in the bell pepper and zucchini, cook for another 5 minutes.
  5. Add the cherry tomatoes and red pepper flakes, sauté for a few more minutes.
  6. Mix in the cooked noodles, soy sauce, and balsamic vinegar.
  7. Remove from heat and stir in fresh basil.
  8. Season with salt and black pepper to taste.
