Loaded Cauliflower Broccoli Casserole

A delicious and creamy casserole featuring loaded cauliflower and broccoli, topped with turkey bacon for a satisfying meal.

  • 1 head cauliflower, riced
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/2 cup sour cream
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, steam the cauliflower and broccoli until tender.
  3. In a mixing bowl, combine the riced cauliflower, broccoli, cream cheese, sour cream, garlic powder, onion powder, salt, and pepper.
  4. Stir in half of the cheddar cheese and half of the turkey bacon.
  5. Transfer the mixture to a greased casserole dish.
  6. Top with the remaining cheddar cheese and turkey bacon.
  7. Bake for 25-30 minutes until bubbly and golden.

Notes

  • For a spicier kick, consider adding red pepper flakes.
  • This dish can easily be made ahead of time and reheated.
