Mexican Rotisserie Chicken Tostadas

A delicious and easy weeknight meal featuring shredded rotisserie chicken on crispy tostadas.

  • 1 rotisserie chicken, shredded
  • 8 tostada shells
  • 1 cup refried beans
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup salsa

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spread refried beans evenly on each tostada shell.
  3. Top with shredded rotisserie chicken.
  4. Bake in the oven for 10 minutes.
  5. Remove from the oven and add lettuce, tomatoes, feta, and cilantro.
  6. Drizzle with salsa before serving.
