Mexican Street Corn Soup

A delicious and easy recipe for Mexican Street Corn Soup that brings the flavors of street corn into a comforting bowl of soup.

Ingredients

  • 4 cups corn kernels (frozen or fresh)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. In a large pot, sauté the onion and garlic until soft.
  2. Add in the corn and cook for another 5 minutes.
  3. Pour in the vegetable broth, bring to a boil, and simmer for 15 minutes.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in the heavy cream, chili powder, cumin, salt, and pepper.
  6. Remove from heat and mix in cilantro and lime juice.
  7. Serve hot, garnished with extra cilantro if desired.

Notes
