Quinoa Apple Salad: A Fruity, Fresh & Flavor-Packed Favorite

Ingredients

  • 1 cup quinoa
  • 2 apples, diced
  • 1/2 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and 2 cups of water; bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  3. Let quinoa cool after cooking.
  4. In a large bowl, mix cooled quinoa with apples, walnuts, cranberries, onion, and parsley.
  5. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  6. Pour dressing over salad and toss to coat.
  7. Chill before serving.
