- 1 cup quinoa
- 2 apples, diced
- 1/2 cup walnuts, chopped
- 1/4 cup dried cranberries
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon honey
- salt and pepper to taste
- Rinse the quinoa under cold water.

- Let quinoa cool after cooking.

- In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
- Pour dressing over salad and toss to coat.
- Chill before serving.
