Sheet Pan Chicken Pitas with Herby Ranch

  • 1 pound chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 whole wheat pitas
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup herby ranch dressing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine chicken breasts, olive oil, garlic powder, paprika, salt, and black pepper. Mix well to coat the chicken.
  3. Spread the chicken on a sheet pan and bake for 20-25 minutes, or until cooked through.
  4. Remove from the oven, let it rest for a few minutes, then slice into strips.
  5. Warm the pitas in the oven during the last few minutes of the chicken cooking.
  6. Once ready, stuff each pita with sliced chicken, cherry tomatoes, cucumber, and drizzle with herby ranch dressing.
  7. Serve immediately and enjoy!
