1 pound shrimp, peeled and deveined
4 slices turkey bacon, chopped
2 cups corn, fresh or frozen
1 cup diced potatoes
1 cup diced onion
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
2 tablespoons olive oil
Salt and pepper to taste
Instructions
In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
Add onion and garlic, sauté until soft.
Stir in potatoes and corn, cook for 5 minutes.
Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
Add shrimp and heavy cream, stir and cook until shrimp are pink and cooked through.
Season with salt and pepper, serve hot.
