Shrimp & Lobster Cheddar Bay Biscuit Pot Pie

  • 1 pound shrimp, peeled and deveined
  • 1 pound lobster meat, cooked and chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas and carrots
  • 1 package Cheddar Bay biscuit mix

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, combine shrimp, lobster, heavy cream, chicken broth, garlic, lemon juice, Old Bay seasoning, salt, and pepper. Cook for 5-7 minutes until heated through.
  3. Stir in the frozen peas and carrots, then transfer the mixture to a baking dish.
  4. Prepare the Cheddar Bay biscuit mix according to package instructions and drop spoonfuls over the seafood mixture.
  5. Bake in the preheated oven for 20-25 minutes until the biscuits are golden brown.

Notes

  • For an extra kick, add a dash of cayenne pepper to the seafood mixture.
