  • 1/2 cup unsalted butter, softened

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon ground cinnamon (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the sugar and butter until creamy, then add the pumpkin, egg, and vanilla. Mix well.
  4. Gradually add the dry ingredients to the wet mixture and stir until combined.
  5. Drop spoonfuls of dough onto the prepared baking sheet and bake for 12-15 minutes.
  6. Let the cookies cool on a wire rack.
  7. For the frosting, mix the powdered sugar, milk, and ground cinnamon until smooth. Spread over cooled cookies.

Notes

  • For a thicker frosting, reduce the amount of milk.
