Spiced Ginger Carrot and Zucchini Bars with Lemon Cream Cheese Frosting

Delicious spiced ginger carrot and zucchini bars topped with a tangy lemon cream cheese frosting.

  • 2 cups grated carrots
  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 2 tablespoons lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the grated carrots, grated zucchini, sugars, and oil.
  3. Add in the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, spices, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Pour the batter into the prepared baking dish and bake for 30-35 minutes or until a toothpick comes out clean.
  7. While the bars are baking, prepare the frosting by beating the cream cheese, powdered sugar, and lemon juice together until smooth.
  8. Once the bars are completely cool, spread the lemon cream cheese frosting on top.

Notes

  • For an extra kick, add chopped crystallized ginger to the batter.
  • Ensure the bars are cooled completely before frosting to prevent melting.
