- 2 cups grated carrots
- 1 cup grated zucchini
- 1 cup all-purpose flour
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 2 tablespoons lemon juice
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, combine the grated carrots, grated zucchini, sugars, and oil.
- Add in the eggs and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, spices, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the batter into the prepared baking dish and bake for 30-35 minutes or until a toothpick comes out clean.
- While the bars are baking, prepare the frosting by beating the cream cheese, powdered sugar, and lemon juice together until smooth.
- Once the bars are completely cool, spread the lemon cream cheese frosting on top.
Notes
- For an extra kick, add chopped crystallized ginger to the batter.
