- 2 slices whole grain bread
- 2 tablespoons sun-dried tomato pesto
- 1 cup shredded mozzarella cheese
- 2 tablespoons butter
- Spread sun-dried tomato pesto on one side of each slice of bread.
- Place half of the mozzarella cheese on the pesto side of one slice.
- Top with the other slice of bread, pesto side down.
- Heat a skillet over medium heat and add butter.
- Once the butter is melted, place the sandwich in the skillet.
- Cook until golden brown, about 2-3 minutes per side, adding more butter as needed.
- Once both sides are golden and the cheese is melted, remove from heat and serve.
