Swirled Chocolate Cupcakes with Creamy Chocolate Filling

  • 1/2 cup cocoa powder

  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, starting and ending with the dry ingredients.
  7. Fold in the chocolate chips.
  8. Pour the batter into the cupcake liners, filling each about 2/3 full.
  9. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow to cool before filling with creamy chocolate filling.

Notes

  • For a richer flavor, add a splash of espresso to the batter.
  • Serve with whipped cream or a dusting of powdered sugar.
