- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/4 teaspoon salt
- 1 cup mascarpone cheese
- 1/4 cup brewed coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- In a large bowl, combine the brown sugar, granulated sugar, and melted butter.
- Add the eggs and vanilla extract, and mix until well combined.
- Sift in the flour, cocoa powder, and salt, and mix until just combined.
- Pour the brownie batter into the prepared pan and spread evenly.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let the brownies cool completely in the pan.
- In another bowl, combine the mascarpone cheese with brewed coffee and coffee liqueur until smooth.
- Spread the mascarpone mixture over the cooled brownies.
- Chill in the refrigerator for at least 1 hour before serving.
- Cut into squares and enjoy!
