Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, sugar, coconut oil, and vanilla extract.
  3. In another bowl, combine flour, salt, cinnamon, nutmeg, and ginger.
  4. Gradually add the dry ingredients to the pumpkin mixture until a dough forms.
  5. Roll out the dough on a floured surface and cut into rectangles.
  6. Add a spoonful of the pumpkin filling to half of the rectangles and top with the other half.
  7. Seal the edges with a fork and make a few slits on top.
  8. Bake for 20-25 minutes or until golden brown.
