  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups crushed tortilla chips
  • 1 can black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 cup diced tomatoes
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 avocado diced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Stir in the taco seasoning, black beans, corn, diced tomatoes, and half of the cheddar cheese. Mix until combined.
  4. Layer the crushed tortilla chips in a baking dish. Pour the beef mixture over the chips.
  5. Top with the remaining cheddar cheese.
  6. Bake in the preheated oven for 20 minutes or until the cheese is bubbly.
  7. Remove from the oven and let cool slightly. Top with sour cream, green onions, and avocado before serving.

Notes

  • For added crunch, use extra tortilla chips as a topping.
  • Customize the toppings based on your family’s preferences.
