Walking Taco Casserole: A Fiesta of Flavors in Every Bite

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups tortilla chips
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 1/2 cup sour cream
  • 1 jalapeño, diced (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  3. Add the taco seasoning, black beans, corn, and salsa to the skillet. Mix well and cook for about 5 minutes.
  4. In a baking dish, layer half of the tortilla chips, followed by half of the beef mixture and half of the cheese. Repeat the layers.
  5. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  6. Remove from the oven and top with sour cream and diced jalapeño if desired.

Notes

  • Serve with extra salsa and chips on the side.
  • This casserole can be customizable with your favorite taco toppings.
