White German Chocolate Cake with Cheesecake Center

  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 16 ounces cream cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3 cups whipping cream
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add the buttermilk, vegetable oil, eggs, and vanilla to the dry ingredients; mix until combined.
  4. Gradually stir in the boiling water until smooth.
  5. Pour the batter evenly into prepared cake pans and bake for about 30 minutes, or until a toothpick comes out clean.
  6. For the cheesecake center, beat the cream cheese and powdered sugar together until smooth, then fold in the whipped cream and white chocolate chips.
  7. Once the cakes have cooled, layer the cheesecake mixture between the cake layers.
  8. Chill the assembled cake for at least 2 hours before serving.
